I’m a huge fan of adding fruits into chicken salads (whether it be apples, grapes, pomegranate seeds, you get the picture) and don’t trust anyone who isn’t. JK, we won’t take it that far, BUT I just think the juiciness it adds to the dish is unmatched. This curry apple chicken salad is bound to be on your rotation for lunches, quick dinners, or even a snack dipped in with Trader Joe’s plantain chips. YUM.
I personally was never a chicken salad (or any salad for that matter….) fan growing up because of the lack of texture in some versions I had tried. No one has time for soggy chicken salad sopping wet in mayo-y dressing (ick) which is why I knew that when I made my own recipe, texture would be my number one priority, behind taste of courseeeee, when creating it. With mix ins like cashews and apples, the texture factor in this is on damn point.
