A fresh twist on my classic tahini bread recipe, this is sure to be a crowd pleaser.
This is the classic tahini bread recipe:
- 6 TBSP Trader Joe’s Organic Tahini
- 4 eggs (flax eggs will NOT work – sorry that you had to be the one to find that out Isabelle)
- 2 TBSP Honey
- 1 TBSP Vanilla extract
- 1 TSP Baking powder
- 1 TSP Cinnamon
Add the following:
- 1 cup blueberries
- The zest and juice of one lemon (more or less depending on how strong you want the lemon flavor)
- 1 TBSP almond flour
PREHEAT OVEN TO 375.
Combine all “classic” ingredients using a whisk, then add the “classic” dry ingredients. In a separate bowl, toss the blueberries and almond flour until blueberries are lightly coated. Add this mixture to the classic batter, and mix in the lemon. Then, pour into a well greased loaf pan.
Bake for 18-20 minutes, or until a toothpick comes out clean.
