This bread can be thrown together in minutes and is chock full of nuts and chocolate. What more could you want?
- 2 eggs
- 1 1/2 cup mashed banana, throw it all in a plastic baggie and mash. This was about 3 large bananas —> 14.9oz or 120g. I love my kitchen scale to measure out ingredients, especially baking. Bananas can differ in size so this ensures I get it right each time I make the recipe
- 1/3 c. coconut sugar
- 2 TBSP melted (and cooled) coconut oil
- 2 TBSP vanilla
- 1 and 3/4 c. whole wheat flour
- 1/2 c. cocoa powder
- 2 Tsp baking powder
- 1 Tsp baking soda
- 1/2 Tsp cinnamon
- 1 c. chocolate chips
- 3/4 c. walnuts
- Maldon Sea Salt Flakes
- 1/4 cup chopped walnuts (and edit*** more chocolate chips, if desired)
Preheat your oven to 350.
COMBINE THE WET INGREDIENTS
Mash the bananas in a plastic baggie. Leave as many lumps as you want (personally, I like it to be a little lumpy to get some banana pieces in the bread). Combine with the remaining wet ingredients. Set aside.
COMBINE THE DRY INGREDIENTS
In a separate bowl, combine the dry ingredients and set aside.
Fold in the dry ingredients into the wet ingredients, but ✨do not over mix✨.
Pour into two parchment lined loaf pans (and again, use the scale to make sure they’re evenly distributed).
Top with a little sea salt and walnuts (and more chocolate chips because why not) before baking 😏 Bake for 40-45 min or until a toothpick comes out clean.
